200g self raising flour
50g cocoa or cacao powder
1 tsp baking powder
2 eggs
300ml milk
100g dark chocolate chips
Butter for frying
Mix all the ingredients apart from the butter together with a hand whisk or electric whisk in a bowl.
Heat a small frying pan to a high heat and add a small knob of butter and allow it to bubble.
Add a small ladle of pancake batter to that pan and fry for about 1 minute and flip and fry a further 1 minute on the other side.
Put the pancake to one side - add a small amount of butter back in the frying pan and repeat making pancakes until the mixture is all used up.
Serve with natural yogurt, maple syrup, mixed nuts and berries.

Use plant based milk, almond or coconut works best
Replace the eggs with 2 tbsp of flaxseeds/chia seeds soaked in a little water for about 15 minutes
Replace butter with coconut oil
Top with coconut yogurt
