Beetroot and Sweet Potato Soup

Serves 3-4 people


This soup is so comforting warming and filling. Perfect for those cold winter days.Beetroot is a great kidney cleanser, it is also rich in nitrates which the body converts into nitric oxide. This compound dilates the blood vessels and improves blood flow, which can help to lower blood pressure and support recovery after exercise.


INGREDIENTS


1 bunch of beetroot peeled and chopped into 1.5cm pieces

1 large sweet potato peeled and chopped into 1.5cm pieces

1 red onion sliced lengthways

2-4 cloves of garlic, peeled but kept whole

1 bell pepper thickly chopped

A few sprigs of fresh thyme

1 tbsp mixed herbs, mixed with a good glug of olive oil and salt and pepper to taste

1 tub of Oatly creme fraiche


METHOD

  • Heat the oven to 200 degrees

  • Place everything except the Oatly creme fraiche in a roasting tray and mix in the the herbs, olive oil salt and pepper

  • Cook in the oven for 35 minutes or until the vegetables are tender

  • Once cooked, place the all of the contents from the tray into a high speed blender with the Oatly creme fraiche and blend till smooth

  • Serve with sourdough bread or a large side salad


TIPS

If you haven't got a high speed blender, a food processor, Nutribullet or a stick blender should work just as well; you may need to add a little extra water to thin the mixture down. This soup can be eaten straight away or stored in the fridge in an airtight glass container for up to 3 days. Please reheat well.
WARNING: your urine and stools may turn pink or red after eating beetroot, this tends to happen for around 24 hours - please do not be alarmed
Beetroot and beetroot leaves are very high in oxalates. If you suffer with kidney stones please avoid eating them.
